Refried beans / Frijoles Refritos:
Refried beans are the perfect side dish to inject more flavor into an everyday meal.
For a special weekend brunch, Chris suggests spreading refried beans on your toast before topping with your perfectly cooked eggs!
800g pinto or navy beans.
¼ cup pork lard (can use oil instead)
½ cup green olives, sliced
½ cup pickled serranos, seeded and diced
250g Mexican chorizo
Cook beans following the pot bean recipe below
Once the beans are cooked strain and reserve the water. Blend the beans using a hand blender and some of the reserved water until the consistency is chunky.
Heat a medium sized pot with the pork lard and fry the chorizo until cooked, about 5 minutes.
Add the beans and fry for 10 minutes, then add the olives and chiles and cook for a few more minutes just before it starts to boil.
