Epazote is a wild herb native to Central America, South America, and southern Mexico. It’s used to infuse stocks and sauces and for slow cooking beans. Fresh epazote has a strong taste and perfume but imparts a very different flavour in cooking. It has been used in Mexican cooking for thousands of years dating back to the Aztecs who also used it for medicinal purposes, including to relieve gastric discomfort that can come from eating too many beans.
