Nothing beats frijoles de la olla for that traditional taste. Deborah Manfree, Napa ceramics genius, was inspired by the women of puebla to make a local version of the olla. Like the Mizteca ollas, they can be used directly over the open flame. With the flattened base they are a little more stable on the stovetop.
